It’s that time of year when everyone is cooking, cooking, cooking. When they aren’t cooking they’re eating, eating, eating.
How about a Steak and Kidney Casserole?
Not with a pastry covering to make a pie, which is a particularly heavy meal and well suited to the wintry English kitchens, but not the best choice in Australia when we have no need of hearty starchy food at any time. Although I must say I once had a delicious steak and kidney pie at a pub in Strahan, down the bottom tip of Tasmania. The wind was blowing up a beauty from Antarctica and a big log fire beckoned from the friendly public bar in Hamers Hotel. (I must write a lens about Strahan).
Steak and Kidney is really a meal for an alpha carnivore isn’t it? All that meat.
If you have the time to let the beef simmer for a couple of hours, get your butcher to chop you up a bit of beef shin – otherwise, stick to something like the round.
Ox kidney is the best kidney to use, it’s a lot easier to work with too. When I cut out the white bits from the centre of the kidneys I simmer them for a few minutes for my cat. He likes a bit of kidney too.
