I made a nice lunch the other day using a variation of a recipe on my laksa lens.
There’s often not much left in the way of food in my place on Mondays, it’s the day before I catch the bus to Queen Victoria Market, but Karen had brought over some green prawns and I always have laksa paste in the pantry. I had no galgangal though, and no lime. But with a bit of chicken stock from a cube, some fish sauce and the laksa paste it was fine.
Although, by the time I had added the prawns and some diced tofu from a block, I had already added a full glass of Coldstream Hills Sauvignon Blanc to myself and I miscalculated the coconut milk. Let’s be truthful, I poured in twice the amount needed. Still, it was a nice bowl of coconutty laksa.
